Ball Jars and Bright Red Fruit

Canning tomatoes is one of my favourite fall things to do. I don’t really absolutely love the whole canning process, but I love to crack open the delights one at a time throughout the year until next fall comes. I also enjoy knowing what is in them, and that they are better by far than the ones processed by the thousands on a production line.

This year was the first year when I actually was able to tell the difference. Before that I had gone with all store bought canned tomatoes, but this year since we finished ours up that I canned last fall early I had to buy some. It isn’t that the store ones aren’t good, because I know I ate them my whole life and never complained-it is just that there is no comparison to the home canned ones. None.

I canned about 40 quarts of roma tomatoes this year. I did 27 last year and that wasn’t enough to get us through, this year we’ll keep our fingers crossed. And yes, I do hoard tomatoes!

Have you canned anything lately? If you could can one thing what would it be? For me it would be certainly tomatoes- and I would store TONS of strawberry, marion berry, and black berry freezer jam! YUM!

    I used to do this… but it’s been awhile. I’m feeling guilty for not doing any this year. I let LOTS of tomatoes go to waste.

    • Oh, wish you could have passed them on to me!! :) I was so worried that I was going to miss out completely because of our trip to Spain. My husband’s grandma hoarded them for me though! She is too sweet. yum.

    Nice Bethany. I am going to try some apple butter from our tree. We’ll see how my process goes. I didn’t even have luck with freezer jam ;) . I haven’t done the “real” canning yet! great pictures! See you Saturday!

    Yum! When I someday live in a house with a garden, I’ll have to try canning tomatoes.

    Love your photos…look very tempting. And love tomatoes as well. You did quite a bit, 40 Wow!
    We have been city people until now (due to work) but I remember my childhood full of harvesting fruit and veggies. We never canned tomatoes though (my dad always got the fresh ones from his customers so I guess that’s why) but we made jams and compotes and things like that and of course put a lot from the harvest into the freezer as well. Must say it did give a lot of satisfaction. Hope to be doing it myself one day again….
